Victoria PetrashovaAfter looking at all the delicious-looking photographs in our interview with Fotolia Contributor Victoria Petrashova we had to ask if she would share one of her favorite recipes.

She kindly (or unkindly, depending on whether you’re trying to lose weight) sent us the recipe for Nusskuchen, a wonderful German nut cake.

Cake ingredients:

2 eggs

100 gm sugar

100 ml vegetable oil

100 ml milk

150 gm flour

100 gm ground hazelnuts

1 teaspoon baking powder

Glaze ingredients (white ganache):

100 gm white chocolate

50 gm whipping cream

Method for the cake:

Preheat the oven to 200° C (180° for a fan oven).

Grease and line a 17-20 cm spring form pan.

Beat the eggs and sugar with an electric mixer on high speed for 2-5 minutes. The mixture has to become thick and creamy with a light yellow color.

Add the oil and milk and continue to mix well.

Mix the flour with the hazelnuts and add the baking powder.

Fold the flour-hazelnut mixture into the egg and sugar mixture. Mix well, but don’t over mix.

Pour the batter into your baking tin.

Bake for around 40 min. (Time depends on your oven); check with wooden toothpick.

The cake will be ready when a toothpick comes out clean.

Leave the cake to cool on a cooling rack.

Method for the ganache:

Cut the chocolate into small pieces.

Then put the whipping cream into small pan and place it on a medium heat.

When the cream comes to the boil, take it off the heat and add the chocolate.

Mix the chocolate together until it all melts and is creamy and smooth.

Spread the ganache on the cold (room temperature) cake.
