When we spoke to Fotolia Contributor Tetiana we couldn’t help but ask her to share one of her recipes from one of her photos. We can imagine it was a pretty tough choice considering all the amazing dishes she has photographed but we think she picked a goodun’, Italian Panna cotta; her family’s favourite dessert.

Panna cotta with fresh strawberry

Ingredients (for 4 servings)

400 ml of cream with 30% fat,

3 tablespoons sugar

0.5 tablespoon of gelatin

10g vanilla sugar (if you don’t have vanilla sugar, just add 1/3 teaspoon of vanilla extract)

100g fresh strawberries (or any other berries or fruits)

Preparation

Mix the gelatin in with 3 tablespoons of cold water and leave to stand for 10 minutes. Transfer to a heat proof container in a water bath and stir until completely dissolved (but do not bring to the boil).

Mix the cream with the sugar and vanilla sugar (and vanilla extract if using instead), over a gentle heat and stir until the sugar dissolves.

Wait until both the gelatin mix and cream have cooled to the same temperature and combine them gently.

Next pour the mixture into  your chosen moulds (it may be a small glasses or bowls) and put in the fridge for 5 hours

Cut the strawberries finely and if you have a sweet tooth, mix with 2 teaspoons icing sugar. Drizzle over the chilled panna cotta.
