My name is Kosta and I’ve been asked to write a blog post for Fotolia about one of my favorite (and most photogenic) recipes.
I live in Kiev, in the heart of Ukraine, but worked as a chef on a cruise ship for 12 years, and in that time got to go around the world five times. Photographing food was just a hobby, but since 2010 I’ve been working as a food stylist and photographer – which by a matter of chance led me into the advertising business – making food for commercial photo and video advertising, and six months ago I began photographing food for cookery books, restaurants, advertising etc.
Here’s a simple and delicious recipe for potato casserole with cheese:
1 kg of peeled potatoes
350-400 ml sour cream
150-200 gm hard cheese
Spices: turmeric, black pepper, coriander, dried herbs (parsley, oregano, or others)
2 tbsp. starch
Pre-heat your oven to 180-200° C.
Prepare the sour cream-fill by mixing the sour cream with starch and adding the salt and spices (1/2 tsp. Turmeric, black pepper, or others).
Chop the peeled potatoes finely and add half of them to the bottom of the casserole dish.
Sprinkle with a half of the grated cheese and pour over a half of the sour cream filling.
Add the remaining sliced potatoes on top, add the remaining sour cream filling and sprinkle with cheese.
Cover with foil and place in the oven. Bake for about 35 minutes and a further 5 minutes without the foil to ensure the topping is golden.
